B is for: Boozy Baking and Baby Boys

So my A-Z challenge has turned into just that, a challenge. What ever do I mean? Well, thanks to the wonderful comment from Elin yesterday, I decided to include something alcohol related in every post from A-Z. 

So today We are going to look at Boozy Baking! 

Todays recipe was taken from the book The Boozy Baker, so we are keeping with the B theme here.  I did however use Jack Daniels instead of Southern Comfort like the recipe asks for, so I re-named it to avoid confusion. In the book it is known as the Southern Comfort Red Velvet Cake. My version is simply:

Tennessee Whiskey Red Velvet Cake

Ingredients for the Cake: 
3 cups flower
4 tbls of cocoa powder 
1 1/2 tsp baking soda 
1/2 tsp salt 
3/4 cup buttermilk 
1/4 cup of Jack Daniels
1 tsp vanilla 
1 tsp white vinegar 
1 Bottle of red food coloring 
12 tablespoons (1 1/2 sticks) unsalted butter softened 
2 cups sugar 
3 large eggs

Ingredients for the Icing: 
14 tbls (1 3/4 Sticks) Unsalted Butter, softened. 
6-8 cups of confectioners  sugar
1/4 cup milk 
1/4 cup Jack Daniels

To start: Preheat that oven of yours to 350 degrees. Take out your 2 round pans and spray them with a nonstick spray or some evoo, and then dust some flower in the pans. You want the flower to just coat the pans so tap the pans to get any extra out. 

Making the cake: First you are going to start with your dry ingredients. Take the flour, cocoa powder,  baking soda, and salt and whisk (or mix well) in a medium bowl. In a separate bowl whisk together your milk, Jack, vinegar, vanilla, and food coloring. You want that color to be a deep red, or else it will turn to a darker pink.  

Now starts the mixing! In a large bowl beat together the butter and sugar until it is a creamy texture. You then want to add the eggs one at a time, and let them fully mix in before adding another. SLOWLY start adding your dry ingredients in, a cup at a time is recommended, while alternating it with your wet ingredients. 

Divide the batter into the two separate pans, and let them bake for 30-40 minutes; or until a toothpick comes out clean. Once done, take the cakes out and let them cool for 20 minutes, then take them out of the pan to cool completely. Cooling the cake is important, or else the icing will melt off. 

Making the Icing: Start by beating the butter in a large bowl until it is creamy; then add 4 cups of confectioners sugar and the remainder of the ingredients to the bowl. Turn the beater on SLOWLY or you will end up with what looks like frosty the snowman vomit all over your kitchen. Let the mixture go into a creamy texture. Gradually finish putting the rest of the powdered sugar in and letting it blend in to the desired consistency. 

Take your icing, put it on the 2 layer cake, and let it cool a little bit. Then grab a class of milk and eat up my friends! Be Aware that while the alcohol does bake off in the cake, it is very much there in the frosting.

Now where does the baby boy part of my title come from? Well my dear blog friends, I would like to introduce you to Jeremy Alexander. He was born on 04/01/2014 at 1:15pm and was only 5lbs 12ozs. 
NO this is not my child, but he is my adopted nephew. Welcome to the world little boy, so many people are very excited to meet you. I hope that you and your mommy sleep well tonight. I cannot wait to smother you in kisses, watch you and your sister become the best of siblings,  and see you grow up.

  1. So I love that you added the alcohol even though I can't have any right now! I've tried several recipes from the Boozy Baking cookbook and loved them all!
